We recently got a great idea for a salad from the salad queen, Emily (ooh, Emily, start a blog with that title, we’d read it!): arugula, pomegranate seeds, and caramelized onions. You can get fancy and add goat cheese, toasted pecans, etc… ENJOY!
2-3 cups greens (arugula/spring mix) $1.00
1 pomegranate’s worth of seeds $1.29
1 onion, sliced and caramelized* $0.50
1/3 cup toasted nuts (pecans or walnuts) $0.75
Cranberry goat cheese crumbles $0.50
Vinaigrette of your liking $0.25
Start with piling the greens on the plate, then add the nuts and the onions. Finally, sprinkle the beautiful red pomegranate seeds on top, add the goat cheese, and then drizzle the dressing on at the end. ENJOY!
*To caramelize an onion, slice into thin uniform pieces and saute with about a tablespoon of butter until the onion gets nice and brown, and well, caramelized. Keep the heat somewhat low while sauteeing so you don’t burn the onion. The whole process should take about 15 minutes, but maybe more or less depending on your heat, your onion, and how much you stir as you go.
