These are SO good. More and more, we’re finding that the simpliest recipes are the best… those recipes that highlight the main ingredient rather than covering it up. These aren’t meant to be sweet potato fries…they are meant to be melt-in-your-mouth sweet potato spears….it’s almost like mashed sweet potatoes that you can hold in your hand…yum.
1 sweet potato, peeled
a drizzle of olive oil
sea salt and fresh cracked pepper
Total cost = well, how much was your sweet potato?
Cut the potato into thick wedges, sort of like steak fries. Place on a baking sheet. Drizzle with olive oil. Sprinkle (heavily) with sea salt and cracked pepper. Bake at 425 degrees for, oh… 25 minutes.
This go really well with steak, hamburgers…or alone! We actually ate them alongside a salad.
