Parmesan-Thyme Roasted Potatoes

These make a great side dish for meat or fish. We enjoyed them with a Beef Tenderloin roast covered in Red Wine Onions.

1 1/2 pounds potatoes*                        $

3 tablespoons olive oil                          $0.30

1 1/2 teaspoons salt                               $free-ish

1/4 teaspoon black pepper                 $free-ish

1 cup (4 ounces) grated Parmesan   $0.50

8 sprigs fresh thyme                               $0.40 (or free from your herb garden!)

                                              Total Cost =  $1.20?

Preheat oven to 400 degrees.

Wash the potatoes. Leave the skin on, and cut the potatoes into 1-inch pieces.

In a medium bowl, combine all of the ingredients and toss to mix well. Pour a bit of olive oil into a 9″ by 13″ baking dish to coat the bottom. Pour the mixture into the baking dish.  

Bake for 50 minutes, tossing the potatoes once during baking to cook evenly. Sprinkle with extra parmesan if desired.
