Grilled Eggplant, Tomato, and Feta Stacks


Like eggplant? like feta cheese? how about tomatoes? Yes?? Good. You should make these. (the picture isn’t doing these justice – we took it on vacation, where we didn’t have optimal food photography lighting…but really, these are attractive, and wildly good.)

1 small eggplant           $1.00

1 ripe tomato                $0.40

4 ounces feta cheese, in a block (works better than crumbled)    $1.50

salt and pepper to taste   $free

Total cost = $2.90

Slice the eggplant into 1/4 inch rounds. Arrange on a plate or baking sheet and drizzle with olive oil. Flip them over. Drizzle the other side with olive oil, too. Grill them.

Next, make stacks of eggplant, tomato, feta cheese, eggplant, tomato, feta, repeat, repeat. Sprinkle with salt and pepper.
