Asparagus with Lemon and Gouda

There are lots of ways to prepare asparagus, and this is the first of what will probably be many more ideas here on 2frugalfoodies. 




1 bunch of asparagus                                                $1.74*

1 lemon                                                                          $0.40

1/4 cup aged dutch gouda cheese, grated      $0.75

Salt and pepper, to taste                                        $free  (ish)

   Add water to a large skillet – fill to about an inch deep if your skillet is big enough. Place the asparagus in the water and turn the heat on to medium. Grind some sea salt over the asparagus and into the water – this will add taste and also make your asparagus more green. 

     Grate the gouda cheese^ and zest half of the lemon. Put these together in a bowl and set aside.

   After the water has come to a simmer, cook the asparagus this way for 5-7 minutes.** Drain the water and put the asparagus on the plates. Squeeze some lemon juice over the asparagus on each plate and then sprinkle with the gouda/zest. ENJOY!

*Price depends on how much asparagus you get. We’ve found it recently for $0.99 per pound.

**If you like mushy asparagus, leave them in longer. If you think they’re getting too mushy before the 5 minute mark – take them out!

^Parmesan, asiago, and other hard/aged cheeses also work well with this dish – don’t waste too much time looking for aged dutch gouda if you don’t live near a Trader Joe’s!
