This salad dressing is easy to whip up and tastes delicious over a simple salad tossed with walnuts and pears. If you leave out the olive oil, this could be a nice marinade for fish, too! This recipe makes about 2 cups of dressing. Store leftovers in an airtight container and use again!
1 fresh pear, sliced $0.60
1/3 cup red wine vinegar $0.80
1 tablespoon honey $0.30
3/4 teaspoon salt $free-ish
1/4 teaspoon pepper $free-ish
1/4 teaspoon vanilla extract $0.02
1 Dash of ground red pepper flakes $free-ish
1/4 cup good olive oil $1.00
Total cost = $2.72
Place all ingredients in the bowl of a food processer/blender. Process until it reaches the desired consistency (you can leave the pears somewhat bigger, so it is a thicker dressing, or you can process until it is creamy and smooth).
