Fish Sandwich

4-6 ounces fresh fish per person (Mahi, Wahoo or Grouper are ideal, but anything works)

Northwoods or other seasoning blend

1 tablespoon canola oil

Extra salt and pepper, to taste

Tartar Sauce (Recipe follows)

Rub fish with spices.  Heat oil in a skillet over medium heat.  Cook fish until flaky, approximately 3-4 minutes per side.  Remove from heat, let cool slightly, and serve with remaining ingredients in sandwich fashion.  Fries, chips, or other not-so-good-for-you sides are recommended.  ENJOY!

Homemade Tartar Sauce (Ina Garten recipe, original here):

  • 1/2 cup good mayonnaise
  • 2 tablespoons small-diced pickles or cornichons
  • 1 tablespoon Champagne or white wine vinegar
  • 1 tablespoon capers
  • 1 teaspoon coarse-grained mustard
  • Pinch kosher salt
  • Pinch freshly ground black pepper

Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.
