Chicken Salad

We roasted a chicken for dinner last night…and the two of us didn’t finish the whole bird…so we made chicken salad! Here’s what you do if you find yourself with leftover delicious roasted chicken…

This chicken salad tastes divine on our homemade focaccia bread…. but it’s great on it’s own or with crackers, too! 

2 1/2 cups roasted chicken, shredded         $1.50

1/2 cup pan sauce from roasted chicken    $Free 

Salt and pepper to taste.

 

Bake focaccia bread (optional). Roast a chicken.   Combine chicken pieces with leftover pan sauce from roasting pan. ENJOY!
