We’ve learned never to underestimate anything between two slices of buttered homemade bread and cooked in a panini press. Especially when the stuff in between the bread includes chicken, apples, brie, and a balsamic reduction!
4 Slices of Homemade bread $0.05
1 grilled chicken breast $1.20
1/4 cup balsamic vinegar $0.15
1 tablespoon dijon mustard $0.12
1 teaspoon honey $0.10
1/2 granny smith apple $0.24
8 slices brie cheese $0.80
1 tablespoon butter $0.05
Total Cost for 2 yummy sandwiches: $2.71 !!
In a saucepan, combine the balsamic vinegar with the honey and the dijon mustard. Whisk it all together and turn the heat to medium, bringing the liquid to a simmer. Let this reduce for about 4-7 minutes, or until it has reduced by half and gets nice and thick.
Slice the apple thinly, and cut the brie and chicken into slices. Put the chicken and apple slices on one piece of the bread. Drizzle the balsamic reduction over top. Then add the brie slices, and put the other piece of bread on top. (Do the same with the other sandwich)
Butter the top of the sandwich. Place this sandwich, butter side down, on the panini press. Spread butter on top of the bread that is now facing up. Close the panini press and cook until golden, brown, and delicious looking. (If you don’t have the pleasure of owning a George Foreman grill, you can grill this sandwich as you would a grilled cheese – on the stove in a skillet.)
