This is a simple, common dish in Spain that is a staple of almost everyday eating. You can find the best of these at local bars or the closest Museo del Jamon (Museum of Ham, a Spanish “fast food” chain.) Delicious!

1 russet potato $0.39

Peel the potato and slice it into small slices (About half the length of a typical fast food french fry.) Saute in the olive oil until the potato is cooked (about 7-10 minutes.) Place on a plate covered with a paper towel to drain the oil and let it cool for 5 minutes.
In a bowl, whisk together the two eggs and salt and pepper. Stir in the potatoes when they have cooled so that they won’t cook the egg. Put the whole mixture in the dish side of a flip-it pan. Cook on one side for 6 minutes and then flip-it and cook for another 2 minutes. ENJOY!
