This is a relatively simple and surprisingly cheap way to get a delicious appetizer out and keep guests happy before the main course arrives. The good prices, like usual, depend on having a Trader Joe’s nearby, but you could probably still make this cheaply by watching your costs carefully.
3 ounce package of smoked salmon $2.99
1/2 block cream cheese $0.65
6 slices of uncle john’s homemade bread $0.16
12 sage leaves $free (from your herb garden!)
1/2 tablespoon olive oil $0.05
24-48 capers $0.15
Total Cost for 24 toasts $4.00
Preheat the oven to 350 degrees. Cut the slices of bread into smaller pieces (approximately 4 per slice) and lay them out on a baking pan. Drizzle with olive oil and toast them in the oven for approximately 7-9 minutes (just until they’re as crunchy you want them.)
Let the toast cool, then add a little bit of cream cheese to each piece.
Cut each sage leaf in half, crosswise. Place 1 piece sage on top of the cream cheese. Separate your salmon into individual layers and cut (verrry carefully) small pieces that will fit each toast.
Place one piece salmon, and one or two capers onto the toast. Serve immediately (or refridgerate until serving).
