These are a cute little hors d’ oeuvre. They fall into that category of food that you see on a tray at a party (your own party, perhaps) and you think, “I should have one of those – they look good.” And next thing you know, you’ve eaten half of the tray. Hate when that happens. But go for it – these are fairly low-fat, and have a fresh, tangy flavor.
(this recipe makes about 12…so multiply if you want more than that!)
3 tablespoons lowfat cream cheese, at room temperature $0.50
6 large shrimp $1.50 (at Trader Joe’s, they are 4.99 a pound!!!)
3/4 teaspoon lemon zest $0.20
1 teaspoon dill $0.05
1/2 cucumber, cut into 1/4 inch slices $0.25
a sprinkle of salt $free-ish
total cost = $2.50
Place shrimp in a small saucepan of boiling water. Boil until pink – 2 to 3 minutes. Strain and cover with ice to cool.
Meanwhile, in a small bowl, combine all but a sprinkle of the dill, all of the lemon zest, and all of the cream cheese. Stir until well combined.
Once the shrimp have cooled, peel them and cut them in half.
Spread a little of the cream cheese mixture on a cucumber slice, top with 1/2 of a shrimp, sprinkle with a little dill and sea salt, and ENJOY!
