Rosemary and Goat Cheese Stuffed Creminis

This is a recipe from Food and Wine, and one that we highly recommend. We’ve simplified it a little bit, but the results are still extremely tasty. This would be a great party food for your next big gathering – you could prepare the mushrooms ahead and the breadcrumbs ahead, and then assemble and heat right before the party. Delicious and fuss-free.

The recipe below is for 2 servings of 4 mushrooms each, so you can multiply as necessary.


8 cremini mushrooms                                   $1.00

2 ounces goat cheese                                     $0.75

1 sprig fresh rosemary                                  $free (from your herb garden)

4 tablespoons olive oil                                  $0.40

Salt and pepper, to taste                               $free(ish)

1/4 cup bread crumbs                                   $0.25

Total Cost:                                                           $2.45

Pre-heat the oven to 400 degrees.

De-stem the mushrooms and place in bowl. Drizzle two tablespoons of the olive oil over them and mix around. Season with salt and pepper. Place the mushrooms, rounded side up, on a cookie sheet or other baking apparatus. Bake in the 400 degree oven for 30 minutes or until soft and looking good.

Meanwhile, crumble the goatcheese into 8 pieces (or 8 equal piles of pieces). (If this sounds like a mess, just wait until the mushrooms are done, and then crumble the goat cheese off right then and there, you really don’t need to do it now.)

Pour the other two tablespoons of olive oil into a skillet and add the rosemary. Fry for 3-5 minutes, and then add the bread crumbs. Stir constantly, browning the bread crumbs and adequately mixing in the rosemary.

Take the mushrooms out of the oven, turn them over, stuff the cheese into the place where the stems used to be, and then sprinkle the breadcrumbs/rosemary over the top and ENJOY!
