Spanish Mackerel

We were at the beach recently and got some Spanish Mackerel from one of the fresh seafood places. The accompanying recipe is not as formal as we usually post here on 2frugalfoodies, but hopefully you’ll use it at the beach, too, and you’ll want to be more relaxed.

Spanish Mackerel Fillets

Olive Oil

Minced Garlic

Lemon Juice

Dill

Salt and Pepper (to taste)

Preheat the oven to 375 degrees.

Drizzle a light layer of olive oil over a glass baking pan. Add the fish, and coat with the remaining ingredients in amounts that you think will taste good. Bake for 13-15 minutes, or until the fish is flaky. ENJOY!

NOTE: Good quality dill really makes for a prettier plate and a better tasting fish.

SECOND NOTE: We served this boiled peel-and-eat shrimp and baked white sweet potatoes, which was delicious. It’s your beach vacation, and you should serve it with what you want to.
