Ingredients:
1 Tbsp sesame seeds
1/4 cup plus 2 Tbsps soy sauce
3 Tbsps unseasoned rice vinegar
2 Tbsps mirin
2 Tbsps grapeseed oil
2 tsps Asian sesame oil
2 scallions, thinly sliced on a diagonal
1/4 cup finely julienned peeled fresh ginger (1oz)
4 portions of halibut (8 oz. each, steaks or fillets)
Freshly ground black pepper
Wilted spinach & Udon noodles (enough for 4 servings)

1. In a small bowl mix the soy sauce with the rice vinegar, mirin, grapeseed and sesame oils, scallions and ginger. In a large, shallow bowl, brush the halibut fillets with half the soy-ginger dressing. Cover and refrigerate for 30 minutes.
2. Preheat the oven to 450 degrees. Transfer the halibut to a large rimmed baking sheet and season with pepper. Bake the fish in the upper third of the oven for 10-12 minutes, or until just cooked through.
3. Plate the noodles, with the spinach on top. Set the halibut fillets on top of that and pour the remaining dressing over the fish. Serve and ENJOY!
