Southwest Quinoa Salad

1/2 cup tri-color quinoa

1 cup water or chicken broth

1/4 tsp salt

1 can black beans, drained

1/2 jar corn & chili salsa (Trader Joe’s)

1 tsp lime zest, finely grated

1/5 Tablespoons lime juice

1/2 cup grape tomatoes, halved

1/4 cup cilantro, chopped

1 avocado, cubed

Cook quinoa in water or broth, according to packing instructions. Stir in remaining ingredients. Serve warm or cold.

*We had this recipe at the tasting table at our local Trader Joe’s… and we are very grateful to whichever employee came up with it. It’s scrumptious.

  1. We actually made a very similar quinoa salad last night but with a greek twist: tomatoes, shredded spinach, avocado, red onion, and feta tossed with lemon juice and olive oil. Very tasty and even better cold for lunch the next day!
