For this recipe, you’ll need to start by making your rice according to the package instructions. Our brand takes about an hour to cook, so we started there first. Oh, I mentioned that we bought it at the Dekalb Farmer’s Market – but they sell it at Whole Foods and other places too. It looks like this:
When the rice is about 15 minutes away from being ready, you’ll need to start cooking the fish. Simply follow our Sole Meuniere recipe. When the fish is almost ready, have a friend prepare the endive leaves (wash the endive, break off the leaves, and lay onto a plate for serving).
As soon as the fish is ready, remove it from the pan, place on a cutting board, and slice into thin pieces. Fill each endive leaf with a spoonful of rice, and top with a piece or two of the fish. Sprinkle fresh chopped parsley over the whole platter, and drizzle some of the sauce from the fish-pan on top. Serve immediately. Enjoy!
