Shrimp, Scallop and Bacon Pasta


4 strips bacon                                       $0.75

1/3 pound shrimp                               $1.67

1/4 pound bay scallops                    $2.00

1/3 pound spinach spaghetti         $0.60

1-2 tablespoons butter                      $0.24

1 tablespoon olive oil                        $0.10

1 minced garlic clove                        $0.10

Zest from 1/2 lemon                          $0.20

Total Cost                                               $5.66

In a skillet, cook the 4 strips of bacon until they are done. While these are cooking, get a pot of salted water boiling on the stove.  Remove the bacon from the pan when done and set on paper-towel lined plate. Discard half of the bacon grease.  Add the pasta to the water when boiling and cook for 11-12 minutes.

Once the pasta has boiled for 5 minutes, cook your shrimp and scallops in the remaining bacon grease until shrimp are pink and cooked through (3-5 minutes). When the seafood is cooking, mix together the butter, olive oil, lemon zest and garlic and set aside. Crumble the bacon.

When the pasta is done, strain it, and return it to the pot it cooked in. Add the lemon garlic butter, seafood, and crumbled bacon. Toss well, serve, and ENJOY!
