Heat the oven to 375 degrees F.
Mix the herbed goat cheese (you could also buy plain goat cheese and mix in dried or fresh herbs!) with a drizzle of olive oil.
Halve the pear and scoop out the core and seeds. Stuff the center of each halve with a spoonful of the goat cheese mixture. Wrap each halve with a slice of bacon and place it on a rimmed baking sheet. Drizzle the pears with a little more olive oil, and sprinkle with salt and pepper.
Bake for 30 minutes. Drizzle with honey, if desired, and serve hot. ENJOY!
