Red Beans and Rice

Thanks to Dad (Ron), 2frugalfoodies are going Cajun! 

2 16 ounce bags of red beans                                       $3.38
2 yellow onions, diced                                                    $0.60
2 cloves garlic, minced                                                   $0.10
1 green pepper, diced                                                      $0.79
4-5 bay leaves.                                                                   $0.25
1 dash of dried thyme                                                      $0.05
1 ham bone (ham hocks can be substituted)         $3.00  
      Total Cost for one HUGE pot:                                 $8.17
 
Soak the beans overnight to soften. 
Bring beans to a boil with bay leaves and ham bone. Add garlic, onion, and peppers. Reduce to low heat and cook all day. Watch the liquid and add water if it looks like it is getting too dry.  Dad says, “You want the gravy good and thick.”  
Serve over rice.
 
*Note: If desire, you can add some sauteed italian sausage for added flavor (and added cost).
