Pulled Pork Burritos with Sweet Potatoes

1 – 1.5 cups left over pulled pork

1 cup left over sweet potato spears, cut into bite-sized pieces

1/2 cup sour cream

1 bunch chopped cilantro

Flour tortillas (we recently discovered that Trader Joe’s has the best)

Heat the pork on the stove, breaking up larger pieces. There’s no need to add any oil here because the pork fat will serve this purpose. On another eye, heat some oil and add the sweet potato bites, searing and re-heating. Be careful – they’re easily burned. (You could also re-heat these in the oven if you prefer). Heat the tortillas slightly in an oven at 350.

Assemble the burritos as you see fit.  Add hot sauce if you want to. Eat. ENJOY!
