4 fillets of lake trout
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon paprika
1 pinch ground cayenne
3 tablespoons canola oil

Thoroughly rinse the fish and cut off any fins that were left on. Combine the dry ingredients in a bowl and then spread the flour mixture out on a dinner plate. Dredge each fillet through the flour and spices, being sure to cover each one well.
Heat the oil over medium high heat. Add the fish, presentation side down (skin side up), and cook for 2-4 minutes, depending on the thickness of your fillets. Using a fish spatula, carefully flip each one over and cook for another 2-3 minutes on the second side, or until the fish is done.
Serve over something like mashed sweet potatoes (or white sweet potato and apple mash!) and ENJOY!
