Orange Pacific Flounder

This is a nice light dinner that goes well with lots of different flavors. We put it over our Yellow Oyster Mushroom Basmati Rice and surrounded it by Sauteed Peppers with Herbs de Provence. The whole meal was ridiculously cheap – total cost was around $3!!



2 Pacific Flounder Fillets                              $1.60

1 pinch orange peel*                                       $0.05

1 pinch herbs de provence                           $0.03

Juice of half of an orange                               $0.25

1 tablespoon olive oil                                      $0.10

Salt and pepper to taste                                 $free (ish)

             Total Cost                                                $2.03


Preheat the oven to 400 degrees.

Drizzle some olive oil over a glass pan and put the fillets on the top. Flip the fish over so that there is now olive oil on each side. Squeeze the orange juice over the top of the fish. Sprinkle the salt, pepper, orange peel, and herbs de provence over the top.

Put the fish in the oven and bake for approximately 10 minutes – or until white and flaky looking. Let it rest for about 3-5 minutes and then serve. ENJOY!

*We just got some dried orange peel from Penzey’s Spices, but if you zest the orange peel from the juiced orange, it’s going to be just as delicious (if not more!)
