Mushroom, Asparagus, Goat Cheese Pizza

This is a simple pizza made with simple ingredients…and it’s divine. It also happens to be vegetarian…but you could get crazy and add some meat. (We made this pizza as part of our Pizza Trio Dinner…. which explains why it is in a smaller dish…a pyrex because we didn’t have another pizza pan.)


1/2 pound fresh asparagus                                              $2.00

1 1/2 cups cremini mushrooms, chopped                $1.50

4 ounces goat cheese, crumbled                                   $2.50

1 recipe pizza dough $1.28

drizzle of olive oil, about 2 tablespoons                     $0.40

Total cost = $7.68

Preheat oven to 425 degrees.

Spread pizza dough on pizza pan and drizzle with olive oil. Cut asparagus into bite size pieces and chop mushrooms.

Saute the mushrooms in 1 tablespoon of butter. Place mushrooms and (raw) asparagus over pizza. Top with crumbled goat cheese. Drizzle again with olive oil for good measure.

Bake for 15 minutes.
