Preheat the oven to 425 degrees.
Drizzle about a 1/2 tablespoon of the olive oil on a glass baking pan. Put the filets in the glass pan and sprinkle with salt and pepper. Drizzle with the rest of the olive oil and put the herb butter on top of the filets.
Bake the fish for 6-8 minutes (depending on thickness – approximately 10 minutes for every inch of thickness should do you for a flounder filet.) The internal temperature should read 135 degrees on your meat thermometer.
Take the pan out of the oven and let the dish rest for 2-3 minutes before serving. ENJOY!
*Pacific flounder is sometimes (as it is at Trader Joe’s) labeled as Dover Sole, which in reality is a much more expensive fish from Europe.
The filets were each about 1/5 of a pound – so they weren’t very big, but with garlic and cheddar mashed potatoes, it turned out to be a great meal!
