Leftovers: Fancy Mac N’ Cheese, chilled
2 cups bread crumbs
3 eggs, slightly beaten
deep fryer with peanut oil (you could also use a stew pot filled 1/3 way with peanut oil – just be careful!!)
Using a sharp knife, cut your leftover mac n’ cheese into small 1 inch cubes. (You definitely need the mac n’ cheese to be chilled for this – otherwise it will fall apart.)
Working quickly and carefully, dip each cube into the egg, then into the bread crumbs. Coat well. Double dip in each if necessary.
Lower into hot oil using a slotted spoon, and fry until golden brown (2 or 3 minutes).
We fried about 5 bites at a time – but be careful that you don’t fill your fryer too full!!
