Crab Cake Stack with Tomato and Fried Egg

1 package (of 2) Trader Joe’s crab cakes (or 2 homemade crab cakes!)

1 fresh, big tomato, sliced

2 eggs

2 tablespoons butter

2 tablespoons olive oil

salt and pepper to taste

Layer sliced tomato on 2 plates. Cook crab cakes in the olive oil until crisp and browned on the edges. Fry eggs one at a time in 1 tablespoon of butter each. (or poach the eggs if you prefer)

Lay one crab cake on each tomato stack, then top with a fried egg. Sprinkle with salt and pepper and ENJOY!
