Artichoke and Mozzarella Neapolitan Pizza

We love pizza! This is our 3rd pizza dough variation on 2frugalfoodies.com…. and the first with a homemade tomoto sauce (totally worth it). The simple pizza dough went perfectly with the simple topping of artichoke hearts and fresh mozzarella cheese.

1 batch neapolitan pizza dough                                 $0.39

1/2 bag frozen artichoke hearts                                $1.20

1 (16 oz) roll low-moisture mozzarella cheese   $4.29

1  batch homemade tomato sauce                           $1.80

4 tablespoons olive oil, divided                                $0.40

1 dash sea salt (coarse or ground)                           $free-ish

1 dash ground black pepper                                       $free-ish

                                                                     Total Cost =  $8.08

Sprinkle the prepared pan of pizza dough with about 2 tablespoons of olive oil. Spread oil around to evenly cover. Spread the homemade tomato sauce over the dough. 

Put the artichokes in a small bowl, cover with the remaining 2 tablespoons of olive oil, and a dash of salt and pepper. Set aside. 

Slice the mozzarella to make discs that are about 1/4″ thick. 

Scatter the mozzarella slices and the artichokes over the pizza in a random fashion. Bake for about 15-20 minutes or until the crust is browning, the cheese is bubbly and the artichokes are soft and fragrant.
