Even though it’s hardly spring….we are ready for summer! With a scoop of vanilla ice cream on top, this recipe will knock your socks off.
1/2 cup sugar $0.20
3 tablespoons cornstarch $0.09
1 recipe Pie Dough $0.90
2 cups raspberries* $7.50(fresh)/$4.00(frozen)
1 cup strawberries, halved* $1.25
1 1/2 cups blueberries* $4.00(fresh)/$3.00(frozen)
Total Cost: $13.94(fresh)/$9.44(frozen)
In a large bowl, mix the sugar and cornstarch. Add the berries and toss to coat them in the mixture.
Line your pie plate with half of the pastry dough. Transfer berry mixture to pie plate.
With the remainder of your pie dough, make a lattice top crust for the top of the pie. A video of that process can be found here.
Cover with aluminum foil and bake at 375 degrees for 25 minutes (fresh fruit) or 50 minutes (frozen fruit). Remove the foil and continue baking for 20-30 additional minutes. It’s done when the fruit is bubbly and the crust is golden brown.

*You can buy these berries (or your own favorites) in separate frozen bags at your local grocery store. OR…you can sometimes find an enticing mix of berries sold together in frozen bags. Those are fine to use, too.
