This is the perfect treat on a hot day. We use fresh strawberries for this recipe and think it makes all the difference. Wait until your local grocery store puts strawberries on a 2 for 1 special, or another good sale… then, this is super frugal and still very fresh.
3/4 cup sugar $0.30
1 tablespoon cornstarch $0.03
1 cup milk (whole works best, but use what you have) $0.16
3/4 cup heavy cream $1.12
3 cups sliced ripe strawberries (price varies) $3.99
2 tablespoons orange juice $0.03
Total Cost = $5.63
Prepare an ice bath by filling a large bowl halfway full of ice and water. Place a clean, empty stainless steel bowl into the ice bath and set aside.
In a medium saucepan over medium heat, combine sugar and cornstarch and stir. Whisk in the milk and then the cream. Whisk continuously until the mixture thickens – this will take about 8 minutes. Pour this mixture into the stainless bowl over the ice bath. Stir occasionally.
Puree strawberries in a food processor or blender. Add the orange juice. Pour this mixture into the gelato base mixture (over the ice bath). Whisk rapidly to combine. Remove bowl from ice bath, dry bottom of bowl (or cold water will drip down your legs), cover with plastic wrap, and refridgerate for about 1 hour. Transfer mixture to ice cream maker and follow manufacturer’s instructions. (Ours was ready after about an hour in the ice cream maker.) Let stand at room temperature for 10 minutes before serving – this will make scooping easier.
