Oatmeal Date Cookies

2 sticks butter, soft
2 cups light brown sugar, packed
3 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
2 cups quick cooking oats
1 cup chopped dates*
2 1/2 cups flour
1 cup sugar
2 tbsp. water
2 tbsp. vinegar
1 cup chopped walnuts
1 tablespoon honey
1/4 cup canola oil
Preheat oven to 350°F.

Combine sugars and butter. Add vanilla, water, and vinegar; mix well.

In a separate bowl, combine flour, baking powder and soda, followed by salt. Combine the two mixtures together. Add dates and walnuts and oats; mix together well. Add honey and canola oil and mix until all batter is moist.

Roll dough in small balls with about 6-9 cookies per ingreased cookie sheet.

Bake for 12-14 minutes. They won’t look done, but they harden and become crispy when they cool.

*An easy shortcut for chopped dates is on the baking aisle. These are pre-chopped and lightly sugared and wouldn’t work for most other date recipes, but are perfect for these cookies!

  1. Oh my gosh, these sound amazing!! I am obsessed with dates, and always use them in anything that calls for dried fruit! I know the chopped dates in the baking aisle are easy, but whole dates that you have to chop are soooooo much tastier!! I just made muffins with dates in them and will blog about them soon!
