Italian Creme Cake

Melissa, one of the the lucky winners of the Southern Living Magazine giveaway, said, “Nothing says Christmas to me like my grandmother’s Italian Creme Cake.” We say – THANK YOU Melissa for this recipe…and nothing says delicious to us like your grandmother’s Italian Creme Cake.


1 stick margarine
1/2 cup vegetable shortening
2 cups sugar
5 egg yolks
1 cup buttermilk (you can make this!)
2 cups all purpose flour
1 tsp soda
1 tsp vanilla extract
1 cup coconut
1 cup chopped nuts
5 egg whites (beaten stiffly, set aside)

After mixing all other ingredients, fold in egg whites.
Bake at 350 degrees for 25-30 minutes.

Icing:
8 oz cream cheese
1/2 stick margarine
1 Box 4x sugar
1 tsp vanilla
1/2 cup nuts

Sprinkle nuts on top

(The picture above is a cake that Melissa made – she halved the recipe, made the cake in a traditional 9 by 13 cake pan, cut it into thirds, and then stacked and iced it – brilliant!)
