Grapefruit Chess Pie


  • 1 9-inch piecrust (homemade)
  • 1-1/2 cups sugar
  • 1 tablespoon all purpose flour
  • 1 tablespoon yellow cornmeal
  • 1/4 teaspoon salt
  • 1/4 cup butter or margarine, melted
  • 1/4 cup milk
  • 2 teaspoons grated Grapefruit rind
  • 1/3 cup freshly squeezed Grapefruit juice
  • 1 tablespoon lemon juice
  • 4 large eggs, lightly beaten

Press pie dough into 9 inch tart or pie pan. With a mixer, whisk together all of the ingredients until blended. Pour into the piecrust. Bake at 350 degrees for 40 to 45 minutes or until center is set. Cool on a wire rack. Garnish with whipped cream and grated rind if desired. (We grated a little lime zest into the cream as it was whipping – delicious!)
