Molly’s Granola!

This granola is awesome! Many of our loyal readers have probably been coming back day after day just hoping that this genius would be posted… and here it is! Thank you to Molly for the recipe and the inspiration!

8 cups rolled oats                                    $1.26

2 cups chopped walnuts                       $6.00

1 1/2 cup brown sugar                           $1.02

4 teaspoons vanilla extract                 $0.32

1/2 cup water                                            $free

1 teaspoon salt                                          $free(ish)

1/2 cup dried cranberries                   $0.75

Total Price                                                  $9.35*

Preheat oven to 275 degrees.

Line 2 cookie sheets with parchment paper or you can spray cooking spray on them (Molly’s trick).

Combine the sugar and water in either a bowl or small pan and heat on the stove  for 5 min until the sugar is dissolved.  Add vanilla and salt to sugar mixture.

In a large mixing bowl combine oats and nuts and sugar mixture.  Spread on cookie sheet and bake for an hour or until golden or crunchy – it could take an hour and 15 or 20 min. When mixture comes out of the oven and it is still pliable, add the dried cranberries. ENJOY!

*This price might seem high, but it is based on two things: (1) Walnuts are really expensive – you could definitely go cheaper on the nuts – Molly uses Almonds from Costco. (2) This is a TON of granola! The cost per serving is a lot lower.

(No, we couldn’t wait!)
