This recipe was adapted from a banana bread recipe that we found on King Arthur Flour’s website. We ended up with a mound of bananas and obviously thought – banana bread! But we’ve shaken things up a bit by adding things like mascarpone cheese, honey, and orange marmalade. These little muffin bites are a great snack with a cup of hot tea or coffee, or make a great on-the-go breakfast.
1/2 stick butter, at room temperature $0.18
3 ounces mascarpone cheese $0.75
1/2 cup plus 3 tablespoons brown sugar, packed $0.44
1 teaspoon vanilla extract $0.08
1 teaspoon ground cinnamon $0.05
1/4 teaspoon ground nutmeg $free (ish)
1 teaspoon baking soda $0.07
1 teaspoon baking powder $0.07
1 teaspoon salt $free (ish)
3 large bananas, ripe and mashed $0.57
1/4 cup orange marmalade $0.30
6 tablespoons honey $1.80
2 large eggs $0.24
1 1/4 cup all-purpose flour $0.07
1/4 cup chopped walnuts $1.25
Total Cost for 36 mini muffins: $5.87
Preheat oven to 325 degrees. Lightly grease muffin pan or use paper muffin cups.
In the bowl of a stand mixer, combine butter, mascarpone cheese, brown sugar, vanilla, cinnamon, mutmeg, baking soda, baking powder, and salt. Beat with paddle attachment until smooth.
Add the mashed bananas, orange marmalade, honey, and eggs. Beat until smooth.
Add the flour, and walnuts. Beating only until mixed well.
Fill muffin cups 3/4 full. Try to refrain from eating spoonfuls of batter…the end result is much tastier, amazingly.
Bake until the tops of the muffins are a nice golden color and a toothpick inserted in the center of a muffin comes out clean…about 18 minutes.
