Mango Salsa

Great with chips, or in a pulled pork burrito – this salsa is delicious and versatile….and good looking, too!

1 ripe mango, peeled, pitted, and cut into 1/2 inch dice

1/4 to 1/2 medium red onion, cut into 1/4 inch dice

1 tomato, cored, seeded, and cut into 1/2 inch dice

1/2 cup chopped fresh cilantro leaves

juice of 1/2 large lemon

juice of 1/2 lime

1 tablespoon olive oil

1/2 teaspoon kosher salt

In a medium bowl, combine mango, onion, tomato, and cilantro.

In a measuring or bowl, stir together the lemon and lime juice, oil, and salt. Stir until the salt dissolves, and then pour over the mango mixture. Stir gently to combine. Transfer to a serving bowl, cover, and set aside for awhile before serving to allow the flavors to meld.
