If we were looking for the best buzz words on the internet, we probably wouldn’t have chosen this recipe. When I first read this issue of Saveur about a year ago, I don’t think I even considered making it. I read the magazine again, and cauliflower soup just didn’t appeal to me. I get it that the title and ingredients don’t inspire everyone to dash to the kitchen and get to cooking. But – we encourage you to learn from our mistakes. Cook this soon.
The inspiration came on the first cold day of fall when we needed something warming and comforting. We also didn’t have a ton of time on our hands, so a hearty, full-day gumbo was a bit out of the question. Looking over our old cooking magazines, I found the old issue of Saveur that focused on European soups. Finally, on the third read-over, this one jumped out at me. Cauliflower, onions, carrots, butter, dumplings and amazing hot paprika made this dish a huge success. Overall, it’s a pretty simple recipe, but those flavors came together beautifully.
