Crawfish Jambalaya

Gardner’s dad’s family is from New Orleans, so Gardner grew up eating delicious things like beignets, gumbo, crawfish, etouffee, po-boys, etc. The world of New Orleans food is relatively new to me, so when Gardner saw a bunch of crawfish at the Dekalb Farmer’s Market and wanted to buy them, I was a little hesitant. I’d been told that they are a happy medium between lobster and shrimp, both of which I like, so we decided to buy them. We had also just found fresh andouille sausage at our neighborhood farmer’s market, so the perfect meal was starting to come together…
