I love peaches – so I guess it’s a good thing that I’m moving to Georgia next week. Gardner has already started his job in Atlanta, and I’ll be joining him very soon.
In honor of the move, and because I couldn’t resist them at the grocery store, I decided to make dinner using fresh peaches. It was Gardner’s suggestion to season the fish (cod) with cumin and coriander, which at first sounded strange to me, but turned out to taste amazing. I count on him for things like that – pushing me out of my comfort zone and helping me realize that peaches CAN go with cumin, and coriander WON’T overpower a peachy salsa. He’s really the brains behind this whole cooking thing.
So – a little peachy salsa over some fresh cod marks the slow return of recipes to this blog. Not too complicated, but perfect for summer because it’s light and fresh. YUM.
