It is finally starting to feel like spring in Richmond. We had a couple of warm days in March that got our hopes up, but they were always followed by rain or even snow flurries. I’m hoping that this time, it’s spring for good. The forecast looks good – so I’m thinking the flip flops can replace the slippers, and I can start to retrieve my spring and summer clothes from the attic. Finally!
When I think of spring-appropriate food, for some reason I imagine peas. But I actually hate peas. So I’m currently searching for spring food inspiration. Chickpea salad will be nice…and lemony risottos and sweet tea and clementine cake and fruit pies. After all of this stewed and roasted meat, after all of the soups and stews and fried cheese, lighter fare is starting to sound amazingly good.
Hopefully we’ll have something delightfully springy to post soon. Any ideas or recipe recommendations are always welcome!
