Shrimp Curry

One of the most frugal food strategies we’ve found over the last two years of writing this blog is using our freezer effectively.  When meat goes on sale, we buy more than we need for this week and store it so we can have a frugal meal in a few weeks or even a couple of months away.

Perhaps the best freezer find so far has been a 2 pound bag of frozen shrimp, 31-40 count per pound (so, a decent size!) that we’ve been able to get for $10.   We love shrimp and grits, shrimp cocktail, and other shrimp inspired recipes (like cajun gumbo or jambalaya).  Shrimp is a great protein to add to simple comfort food or try and be adventurous with recipes from around the world.

After a few servings of shrimp and grits in a row, we decided we wanted to do something more exotic with the last serving of shrimp in our last bag — so we found this delicious curry recipe online.  The directions are simple and the results are flavorful and interesting – we hope you enjoy it too!

  1. I had a few friends over made a yellow curry with chicken and veggies, similar to the one you guys made for me :), and they raved! It was so delicious and so easy! What a great frugalfoodie idea 🙂
