Gardner mentioned his cereal-association with dates in the last post. For me, dates = Amelia Bedelia. I loved all of the Amelia Bedelia books as a kid, but the only one I can truly recall is the Christmas story in which Amelia bakes a date cake. She can’t figure out what dates are, so she cuts up the pages of a calendar and bakes them into her cake. To this day, when I see dates, I think of her silly cake. I realize that admitting this makes me a huge dork, but it’s the truth.
These cookies are a nice twist on traditional oatmeal raisin cookies. We used the lightly sugared dates that can be found in most stores’ baking aisles and some oatmeal to create this new cookie. Each cookie is surprisingly chewy and crispy at the same time, and the dates and light taste of honey were really delicious.
This recipe is egg-free… for no particular reason, other than that we didn’t have eggs when we set out to make dessert…
