Happy Christmas Eve!
The second course in our Christmas meal was a winter salad with curry vinaigrette. I’ve discovered that my favorite kind of salad is one without lettuce. Who needs lettuce when you can just pile all of the good stuff together and eat that instead?
We’ve combined grapefruit and avocado in a salad before, so this is a remix of sorts.
We took Thomas Keller’s recipe for Curry Vinaigrette and adapted it a bit to make it our own. The curry flavor really tastes delicious with the tart grapefruit and the creamy avocado. OH! And I should mention that you’ll probably be seeing a lot of grapefruit recipes in the near future – a big thank you to David and Becky for those!
