This recipe was probably inspired by the Watermelon, Mint and Red Onion salad that we posted earlier this summer. When you have a little mint lying around, AND you’ve discovered that it pairs well with fruit… things can get a little crazy. Mint actually goes really well with cantaloupe – who knew? We added tomato on a whim, which turned out to be a small stroke of genius.
I’m sure this combination has been done before, but I’ve never seen it… and, I think it’s about time I told you about it so that you can enjoy it, too. Hurry!! – while the cantaloupe is still on sale!
P.S. – The little drizzle of goodness streaming toward the salad is from a Balsamic-Glazed steak…which was also outstandingly tasty.
