This salad was a huge hit with dinner guests recently. The subtle asian flavor, combined with the freshness of the cilantro and local tomatoes, was outstanding. And, the avocados…
I think avocados might be underrated. They are super delicious and I love them. I love them on salads and sandwiches. I love making guacamole. I love squishing them up and making avocado dips and speads. I love eating them plain, too, with salt and pepper. I have never made anything crazy or out of the ordinary with them, because I think this is weird (love the blog, though)…but still, I think they are underrated and I think you should eat more avocados.
This salad is a good excuse to go out and buy two avocados. Eat the first one with salt and pepper, and then put the second one into this salad. Or maybe buy 10 and make this salad, guacamole AND turkey/avocado sandwiches.

Oh my, my two favorites – avocado and tomatoes all in one! A marriage made in heaven.
So divine, yet so good for you! With frugal and foodie together you cannot go wrong.
Thanks!
Yummy!
