For the past two weeks, we’ve had the kind of weather that makes you happy when you walk outside. It’s been sunny and warm, and perfectly breezy at night. And I think mother nature was worried that I was getting spoiled…because today, so far, it’s just crappy outside. Clouds clouds clouds with a good chance of rain and thunderstorms later. Boo.
When the weather gets nasty in the winter, I like to curl up with soup or stew and cheese toast. Or maybe something like Cassoulet or Chicken Pot Pie. Summer is a different story: I still want to put on comfortable clothes and hunker down for a good dinner, but a fancy grilled cheese sounds much more appropriate. Agreed?
Good thing we just made Bruschetta because we had 90% of the ingredients already – and a Caprese Grilled cheese is so much more tasty than a regular grilled cheese. We promise.
