Seared Sea Scallops with Pomegranate Sauce

Whether we’re at a restaurant or at home, scallops feel like a special occasion meal. Perfectly cooked sea scallops have such great flavor and texture, but the problem is that you have to pay for them. At most restaurants, when you add anything fancy on top of the scallops, the price only goes up from there.

Since our goal is frugality, we decided to challenge this standard. Taking scallops and adding a fancy sauce (pomegranates are fancy to us) should surely be an expensive meal. But no! It’s not! Getting scallops from Trader Joe’s (as well as the pomegranate and white balsamic vinegar), two small dinner portions are only $6.82 – that’s $3.41 per serving! Tell your favorite top tier restaurant to beat that!
