Apple and Prosciutto Toasts

I’m getting there. I’m working on accepting fall. During the last days of summer, the thought of fall was pretty appealing – warm cider, pumpkin bread, chili, homemade soup, pretty leaves and crisp days…. but today, for the third day in a row, it’s COLD and RAINY. boo.  So, fall, if you could just be crisp and beautiful and sunny again…I’d really appreciate it.

We’ve purchased canned pumpkin. And I want to use it. Any input on what I should make? I saw some awesome recipes yesterday – pumpkin and chocolate chip muffins, pumpkin spice cupcakes, pumpkin bread, pumpkin cheesecake, pumpkin pie, pumpkin soup…. thoughts?? Do comment and let us know!

In the meantime – make these! They are easy to make and combine just the right amount of salty and sweet. Enjoy!
