Red Velvet Cupcakes with Cinnamon Cream Cheese Icing

I was always a little skeptical of red velvet cupcakes, because I was under the impression that they were just chocolate cupcakes dyed red… which is sort of true… but I always totally underestimated how fun it is to eat colorful food!

These cupcakes were uber cocoa-y, and the cinnamon icing added a fun twist. We give this recipe 2 thumbs up! (x 2frugalfoodies = 4 thumbs up!)

  1. This icing would be perfect for the Applesauce Cake! I made my grandmother’s spice cake for my dad’s birthday party – aka Thanksgiving – and made the cake in the shape of a turkey (I added cocoa to cream cheese icing for the perfect turkey color). Once he gets on the ball and mails me the pics they’re all yours; for now, here’s the recipe!

    Applesauce Cake
    3c flour
    3T cocoa
    1t salt
    2.25t cinnamon
    .5t cloves
    .75t nutmeg
    .75t allspice
    .75t baking soda
    2.25t baking powder
    .75c soft shortening
    2.25c sugar
    3 eggs (or 6 egg whites)
    2.25c applesauce
    1.5c raisins
    optional: 1c chopped nuts

    Coat raisins and nuts with flour before combining all ingredients and beating together. Place mixture in three 9 inch pans; bake at 350 until done.

    Use the 2frugalfoodies cinnamon cream cheese icing to top!
