Maple-Roasted Butternut Squash

Remember how I said we love Ina Garten? Well – love has turned into obsession this fall.  I have never in my life had the urge to deal with a tough, huge butternut squash more than I do right now. That is because I’m addicted to this new (Barefoot Contessa) recipe, that we’ve now had twice in the last week. I say “deal with” the squash, because they tend to be hard to peel, hard to hold and hard to cut….all due to their bulbous shape. Not to mention the seeds….they’re like pumpkins on the inside. But – I’ve already done all of that twice this week – just to enjoy this recipe. Ooo it’s so tasty.

The squash is pictured above on an empty plate. Later, we added Roasted Chicken and Bacon and Herb Quinoa to the plate….more on the Bacon Quinoa soon. Yum.
